DAMN but this was good! We had some chicken leg quarters and I didn't know what to do with them but I just felt like cooking....so I put them in a saute pan to brown, with just some salt and pepper. Then I looked around and figured I needed to do something else so I quartered a handful of clementines and put them in my big yellow pot (that the official name of my Le Creuset), dumped in some leftover olives and garlic cloves. I set the browned chicken on top of it and tossed a bunch of leftover sage leaves on top, added a bit of chicken broth and roasted it uncovered in the oven until it was completely done.
I thickened the leftover pan sauce with a bit of flour to make a gravy of sorts and served it with simple boiled potatoes and sauteed broccoli. The combination of the olives, the clementines and sage was just lovely.
I'm rather pleased with myself!
Come to think about it...a bit of sherry added to the pan might have been nice....
