I attempted my mother's meatloaf mashed potato roll and uh.....it was not a success. My childhood memories look NOTHING like what follows. I mixed up the meatloaf (which tasted great) and patted it into a rectangle on a sheet of wax paper. So far so good.
I made Ernie make the mashed potatoes because his are better than mine and they were heavenly. So I spread them on top and then used the wax paper to lift the whole thing and roll it up. It seemed way too easy. I should have known. Actually I think you can spot one of my mistakes in the picture below.
I should have sealed the seam and put in on the bottom because.....this is what happened:
Now I must say, it was delicious but uh....not exactly the nice little roll I was going for. I think my mother always cooked her meatloaf in a loaf pan however. I've gotten away from doing that but perhaps it needs that to hold it together..... I also did a little glaze on top which she never did.
I'm putting it on the menu for next week though because I am GOING to conquer this!!
