Sexiest tasting tomatoes I have ever had. Chopped up the yellow one, and the grizzlier of the red ones, added a dash of red wine vinegar, olive oil, a sprinkle of sugar and salt and let them sit for awhile. They were intoxicating. Best tomatoes of the summer. I didn't even bother adding basil. Thank you, and congrats, to Heather and Steve!
Getting to the end of the summer corn. I cooked it in butter, which I don't use as much. It was lovely, but will probably go back to olive oil. Added a few slivers of basil, salt and a good dash of black pepper.
Sometimes you walk through the dining room at the just the right time to catch this...
Ernie left me a note on my chair in case I woke up while he was gone.
I gotta say. Rascal has really crept into my heart. And it's endearing how devoted he is to Owen.
We actually managed to do a bit more cooking this week. This plate is not beautiful, but it was really good. Mashed sweet potato with hot sauce and lime juice; green beans with walnuts and a bit of walnut oil, and a thin pork chop seasoned with Old Bay (my new favorite naturally low FODMAP seasoning) and sauteed quickly in a cast iron skillet. Oh, and a bit of slivered basil on top.
The next night we had the leftover vegetables, and they were just as good, with a roasted chicken thigh and tomatoes.
Onward.
